Otak Otak Pizza

Pizza Dough
140g high-protein bread flour
140g plain flour
20g butter
1 tbsp castor sugar
1 tbsp milk powder
1 tsp salt
½ tbsp rosemary
1 tbsp black sesame seeds
190ml cold water
1 tsp instant yeast
Toppings
3 packets fish otak (each pkt 180g)
(Cook each packet using Auto mode
no. 1 and set weight at 200g.
Once done, mashed otak with fork)
130g tomato (cubed)
100g large onion (sliced thinly)
6 pcs slice canned pineapple (cubed)
½ tsp black pepper (coarse)
300g mozzarella cheese
4 tbsp mayonnaise
4 tbsp chilli sauce
Paprika, as desired
Method
1 Place all the pizza dough ingredients except for yeast into the bread pan. Place the yeast in the yeast dispenser. Select Pizza Dough menu “10” and press Start. Timer display: 45 minutes.
2 Press Stop when you hear the beep sound.
3 Divide the dough into 3 pieces for a thinner crust and shape them into balls.
4 Roll out the dough to your desired size and lay them on the baking paper. Make holes on the dough with a fork.
5 Place the dough in the Cubie Oven, set to ferment mode (ferment for about 40-50 minutes) until the dough rises to double of its height.
6 Remove the dough from the oven and preheat oven at 210ºC till hot.
7 Bake the dough at 210ºC for about 8-10 minutes (shift tray during ½ time).
8 Take out dough from the oven, overturn it and spread mayonnaise and tomato sauce, followed by onion, tomato, pineapple, otak, black pepper, cheese, and sprinkle with paprika.
9 Bake again in a preheated oven at 210ºC for about 8-10 minutes (shift tray during ½ time).
Note: Best prepared with Panasonic Cubie Steam Oven NU-SC100 and Panasonic Bread Maker SD-P104 / SD-P2001
